Ingredients: 50ml Trois Rivières Dore Rum
10ml Lagavulin Single Malt Whisky (or any Islay Single Malt as alternative)
15ml lime juice
15ml Trois Rivières sugar cane syrup
5ml Marachino liqueur
Method: Rinse the martini glass with the whisky. Shake all other ingredients with ice and double strain into chilled glass.
Garnish: Orange zest

Ingredients: 50ml Jensen Bermondsey Gin
20ml Roses Lime Cordial
2 dashes Fee Brothers Grapefruit Bitters
Method: Shake all ingredients with ice in a shaker. Double strain into a chilled Martini glass.

Ingredients: 50ml Banks VXO Rum
25ml fresh lemon juice
15ml vanilla syrup
2 muddled blackberries
Method: Shake all ingredients in a mixing glass filled with ice and strain. Serve over crushed ice.

Ingredients: 50ml Beija-Flor Pura Cachaça
1 lime
2 brown sugar cubes
sugar syrup to taste
Method: Cut lime into quarters squeeze into glass with sugar and muddle. Fill glass with crushed ice and add Beija-Flor pura. Stir and add syrup to taste.
Garnish: Crushed lime wedges

Ingredients: 50ml Diplomatico Blanco Rum
20ml fresh lime juice
10ml sugar syrup
Method: Shake all ingredients with ice in a shaker. Double strain into a chilled Martini glass.

Top Soda
Method: Shake the first three ingredients and strain into the glass. Then top with soda water.

15ml fresh lemon juice
10ml Trois Rivières sugar cane syrup
15ml passion fruit puree or half a passion fruit
Top with Champagne
Method: Shake all ingredients except champagne and strain into a pre-chilled Flute. Top up with champagne.

25ml Antica Formula
Dash Peychaud Bitters
Method: Chill a mixing glass and add ice. Then add all ingredients and stir until chilled and marginally diluted finally straining into a Martini glass.

Ingredients: 50ml Diplomatico Reserva Rum
Half bar spoon of honey
3 dashes of Fee Brothers Old Fashioned Bitters
5ml Maraschino liqueur
Method: Add all ingredients and stir for at least three minutes. The Diplomatico can be added in two measures to help dilution.
Garnish: Orange zest

Method: Add all ingredients into shaker with ice, shake and double strain. Float cream on top.
