Adore
Glass:		Martini
Ingredients:		50ml Trois Rivières Dore Rum 10ml Lagavulin Single Malt Whisky (or any Islay Single Malt as alternative) 15ml lime juice 15ml Trois Rivières sugar cane syrup 5ml Marachino liqueur
Method:		Rinse the martini glass with the whisky. Shake all other ingredients with ice and double strain into chilled glass.
Garnish:		Orange zest

Bermondsey Gimlet
Glass:		Martini
Ingredients:		50ml Jensen Bermondsey Gin 20ml Roses Lime Cordial 2 dashes Fee Brothers Grapefruit Bitters
Method:		Shake all ingredients with ice in a shaker. Double strain into a chilled Martini glass.
Garnish:		Grapefruit zest twists

Blackberry Reserve
Glass:		Highball
Ingredients:		50ml Banks VXO Rum 25ml fresh lemon juice 15ml vanilla syrup 2 muddled blackberries
Method:		Shake all ingredients in a mixing glass filled with ice and strain. Serve over crushed ice.
Garnish:		Blackberry and slice of lemon

Caipirinha
Glass:		Rocks
Ingredients:		50ml Beija-Flor Pura Cachaça 1 lime 2 brown sugar cubes sugar syrup to taste
Method:		Cut lime into quarters squeeze into glass with sugar and muddle. Fill glass with crushed ice and add Beija-Flor pura. Stir and add syrup to taste.
Garnish:		Crushed lime wedges

Daiquiri
Glass:		Martini
Ingredients:		50ml Diplomatico Blanco Rum 20ml fresh lime juice 10ml sugar syrup
Method:		Shake all ingredients with ice in a shaker. Double strain into a chilled Martini glass.
Garnish:		Lime zest twist

Domaine De Spritz
Glass:		Highball
Ingredients:		25ml Domaine De Canton 50ml Gancia Bianco 20ml Fresh lemon juice Top Soda
Method:		Shake the first three ingredients and strain into the glass. Then top with soda water.
Garnish:		Lemon twist

French Passion
Glass:		Champagne flute
Ingredients:		35ml Trois Rivières Blanc Rum 15ml fresh lemon juice 10ml Trois Rivières sugar cane syrup 15ml passion fruit puree or half a passion fruit Top with Champagne
Method:		Shake all ingredients except champagne and strain into a pre-chilled Flute. Top up with champagne.
Garnish:		None

Ginger Manhattan
Glass:		Martini
Ingredients:		15ml Domaine De Canton 50ml Rittenhouse Rye 25ml Antica Formula Dash Peychaud Bitters
Method:		Chill a mixing glass and add ice. Then add all ingredients and stir until chilled and marginally diluted finally straining into a Martini glass.
Garnish:		Cherry

Good Old Fashioned Reserve
Glass:		Old Fashioned
Ingredients:		50ml Diplomatico Reserva Rum Half bar spoon of honey 3 dashes of Fee Brothers Old Fashioned Bitters 5ml Maraschino liqueur
Method:		Add all ingredients and stir for at least three minutes. The Diplomatico can be added in two measures to help dilution.
Garnish:		Orange zest

Humming Bird
Glass:		Martini
Ingredients:		50ml Beija-Flor Velha Cachaça 50ml pink grapefruit juice 2 bar spoons of honey
Method:		Shake all ingredients with ice and double strain into chilled martini glass.
Garnish:		Grapefruit zests

Morella Cream ( By Brian Silva, Rules )

Ingredients:		10ml Jensen Bermondsey London Dry Gin 25ml Grants Morella Cherry Brandy Dash Galiano 5ml Crème De Cacao Double cream
Method:		Add all ingredients into shaker with ice, shake and double strain. Float cream on top.
Garnish:		None

Glass:		Collins
Ingredients:		50ml Diplomatico Reserva Rum Top with Ginger Beer 1 dash Angostura Bitters
Method:		Pour the rum into the glass, add cubed ice, top up with ginger beer. Finish with bitters and stir.

Old Tom Martinez

Ingredients:		50ml Jensen Old Tom gin 40ml Carpano Antica Formula Vermouth 5ml Grants Morella Cherry Brandy 2 dashes orange bitters
Method:		Pour all ingredients into a mixing glass, add cubed ice and stir. Strain into chilled Martini glass.

Ingredients:		25ml Jensen Old Tom gin 25ml Carpano Antica Formula Vermouth 25ml Campari
